Gastronomy Raw Burgundy!

As much as Brad Pitt and Angelina Jolie were moderate believers, gastronomy and Burgundy are a marriage we believe in like crazy. Their unfailing loyalty to tradition, their boundless love of flavour and taste, their perfect harmony between food and wine… We think it’s a big yes.

Would you like to witness their union? Take the Route des Grands Crus de Bourgogne without delay, and enjoy the pleasures of fine addresses and gourmet tips.

Day 1 Gourmet bookshop, story time and white asparagus

Your departure : Dijon

Light as a gougère*, proud as a coq au vin and (almost) as perfect asan œuf en meurette**,Dijon’s gastronomy has it all. Add to that a pinch of prestige, a handful of Michelin-starred restaurants and some exceptional Climats*** and you’ve got the perfect programme. The only problem: once you’ve tried it, you just can’t live without it. You’ve been warned!

* Savoury puff pastries with cheese. Just addictive.

** Poached eggs with a red or white wine sauce.

*** False friend here! Burgundy’s Climats are parcels of vines

Good morning Burgundy!

You’ve had it on the tip of your tongue since you arrived, but now it’s right in front of you: welcome this morning to the Cité Internationale de la Gastronomie et du Vin in Dijon! In just a few minutes, this temple to fine French food will sweep away all certainties and preconceptions. Overpriced? Admission to the Cité is free, so you can explore it at your own pace. Elitist? That was before you started browsing through the 10,000 books in the Librairie Gourmande, taking a wine tasting course open to all and discovering Dijon’s architecture and heritage interpretation centre. Too long a name for too short a visit.

  • The CIGV Gastronomic Village (Dijon)

The beginning of hunger

At the CIGV Gastronomic Village, you never know what you’re going to get, but you’ll always leave with your arms full. Especially if you start at Le Billot, the butcher’s shop of excellence. Even more so if you continue with the nuggets from the La Planche cheese dairy. And even more so with the treasures of the Manège à Moutardes.
Prefer to put your feet under the table? Opt for the Meurette & Persillé restaurant “where each dish tells the story of Burgundy’s history and tradition with passion and delicacy”. Not from us, but from the Chef!

In the afternoon

Mustard is above all a story of impatience. The Dukes of Burgundy used to shout “Moult me taaaarde” as they hurried off to battle. You’re in a hurry too, because your cooking class is about to start! Today, it’s all about creating an authentic Dijon mustard according to the rules of the art. Story time is essential to understand the origins of the spice, before you get to work. Mould, mash, whisk, crush (it really takes the edge off, doesn’t it?) and enjoy the fruit of your workshop. A fine, powerful experience not to be missed.

Our favourite note

In the “Who knows why?” category, the Burgundy Grands Crus Route presents the World Championship of the Egg in Meurette! Far from being anecdotal, this official competition, open to the general public, rewards the best version of the Burgundy icon. Surprising, amazing and, above all, delicious.

Pssst: it’s happening in October, so book your tickets!

Those evenings

Reinventing Burgundy on the plate: that’s the bold challenge taken up by two-starred chef William Frachot at the helm of Le Chapeau Rouge. And have they succeeded? You be the judge, as he presents a bold, modern menu that focuses on the intimate story of the product rather than the show-off on the plate. Crisenon trout with geranium, white asparagus with blackcurrant buds or farmhouse goat’s kid with green curry: the terroir travels, and we like it that way.

In fine fettle

End the evening in a cosy bed at Studio la Chouette d’Or, right in the centre of Dijon. Modern and uncluttered, the décor invites you to relax in front of a trendy series on the flat screen, while your tea brews in the kitchen area. Tonight, it’s Burgundy & chill!

Day 2 Vendangeur, gingerbread and king-size bed

Well rested? I promise you, the morning will be a gentle one, with a daydream in the streets of the city centre to discover Dijon’s winegrowing past. Do your walls have ears? Ours have bottles! Or rather their contents, like the Place François Rude (known to the people of Dijon as the Place du Bareuzai) and its statue of a grape-picker with his bare feet in a vat. A few vine-sculpted town houses later, and you’re in the hustle and bustle of the market. Forget the stalls (sorry) and concentrate on the Halles and its architecture, adorned with vines, harvests and other game.

The beginning of hunger

You’re not going to leave empty-handed! Make the most of the market to put together your picnic for the day and grab something super local and super fresh. We’re going on a cheese spree (Epoisses, ami du Chambertin, Délice de Pommard), a big jar of Yonne gherkins, and an unlimited supply of nonnettes and pain d’épices.Oh yes, and a bottle of blackcurrant liqueur.

In the afternoon

Your epicurean roadtrip along Burgundy’s Route des Grands Crus continues with a visit to Mulot & Petitjean. Their speciality? Making traditional gingerbread, for over 225 years. From a modest family shop to a veritable Dijon institution, this is a delicious story to be savoured during a guided tour of the factory. And the shop. With fig, ginger, caramel or orange, gingerbread is now coming out of the cupboard. We can’t wait!

In Vosne-Romanée, La Cuverie de Vosne is an instant favourite. And with good reason! Built as a real living space, this cosy wine bar also offers a delicatessen, a café, a post office and guest rooms, while remaining serene and elegant. Fine palates will opt for a glass of wine, those with small appetites for a gourmet platter and those with big appetites for a plate specially concocted for them.

In fine fettle

Enjoy the Junior Suites at La Cuverie de Vosne-Romanée! And find what you’re looking for in one of the 4 bright rooms, each with its own distinctive design and thoughtful touches. Air-conditioning, king-size bed, umbrella shower and cocooning bathroom linen: we know some people who will sleep well.

Day 3 Red fruit, cocotte eggs and beekeeping

Good morning Burgundy!

The Côte-d’Or blackcurrant route? We love it. From Dijon to Nuits-Saint-Georges, get ready to see the country.

Our must: a visit to Ferme Fruirouge in Concoeur,in the Hautes-Côtes de Nuits. Here, the welcome is as warm as the red fruit grown organically. Blackcurrants and other berries are transformed into butter, drinks and even fruit ketchup.

The beginning of hunger

The Côte-d’Or has a flair for good places to eat. The proof is in the eating at La Maison aux Mille Truffes this lunchtime. What makes it special? It uses the precious mushroom from starter to dessert to surprise and excite the taste buds. Risotto, eggs en cocotte, tiramisu and iced nougat, each dish becomes an original and refined experience. All accompanied by the smiles and good humour of the whole team.

In the afternoon

It’s time to discover where the superb truffles on your plate come from! La Maison aux Mille Truffes offers workshops in truffle finding*, followed byan essential tasting of your harvest. If you’re in the right place, you’ll also need to be there at the right time: the black diamond is hunted from mid-September to the end of January for the best experience.

In a modern, gourmet setting worthy of Top Chef, discover the secrets of exceptional desserts over the course of a few hours. Listen, observe and take action under the watchful eye of Burgundy gastronomy experts. Chef, yes chef!

The beginning of hunger

Is midday approaching and your stomach is rumbling? Head for the Carmin restaurant on Beaune’s Place Carnot , a stone’s throw from the Hôtel-Dieu – Hospices de Beaune. Sleek, intimate and unpretentious, the decor of this Michelin-starred restaurant is also reflected in the dishes, where the produce is king. Market cuisine is the order of the day! Our favourites: the escalope of pan-fried foie gras with rhubarb, and the soufflés with verbena liqueur for a sweet note.

Not to mention the on-site shop with its many different mustards, each more delicious than the last. You’ll never look at your jar in the same way again.
