Like a vin de garde that you wouldn’t dare wake from its slumber, the town is like a delicious dream and can be rediscovered ad infinitum. The Hospices, yes, but not the only ones! Beaune also knows how to indulge in a bit of indulgence, whether it’s a generous meal or an early-morning stroll. So, are you a wise or a foolish man? Pinot noir or Chardonnay? The choice is yours…

Good morning Burgundy!

There are those who start the day with a coffee and two slices of bread. And those who start it with a Corton Charlemagne Grand Cru. I promise, it’s for a (very) good cause: a tailor-made wine tasting course with Sensation Vin. Privatised and personalised, please! On site, Céline and Damien open the doors to premium oenology with a fine selection of local vintages. You’ll be able to see red with the dresses of Vosne Romanée and not leave any white between two Montrachet wines . One thing’s for sure: you’re in for a treat.

According to the Romans, the truth is in the wine. And the Caves Madeleine won’t deny it! All you have to do is try their lamb neck confit en raviole for a revelation, and their caponata of confit vegetables for a pretty epiphany. Don’t be fooled by its apparent simplicity: the refined cuisine of this no-frills bistro already has its favourites (particularly with us). Simple but not simplistic, epicurean but not for nothing, this is our winning address.

In the name of the father, the Fixin and the holy Meursault, head to the Maison Patriarche in Beaune to discover one of the greatest cellars in Burgundy. There are two ways to explore the cellars of this prestigious estate: a self-guided tour, with an additional audio guide and a tasting of 6 great wines. Or in privilege mode, for an introduction in the company of a sommelier from the House. A fascinating labyrinth, 5 kilometres underground and millions of shiny bottles on their shelves: a Wine Expert’s dream!

Tea Time at the Hostellerie de Levernois

You’ve got a new appointment! Not in your diary (for once) but on the terrace of the Hostellerie de Levernois, where head pastry chef Lucas Chambfort is waiting for you for tea time. And with him a selection of pastries to die for, from sweet mignardises to delicate savoury bites. It’s fine, it’s easy to eat, and it’s open to visitors from outside the hotel.

Beaune news: today’s cooking workshop is with Terroirs by Adeline. Much more than a gourmet meal, your guide will be sharing with you a whole range of Burgundian art de vivre this morning. Cheffe, yes cheffe! We’re off on an academic tour of the vineyards, followed by an introduction to the best local wine pairings, and ending with an essential tasting of specialities.

At the wheel of this top-of-the-range escapade, Sonia distils the secrets of this exceptional terroir, the birthplace of the local superstar: Pinot noir. A new day, a new city, and today we’re back in Dijon for a tour of the city centre. We’ll spare you the mustard puns (for now) and concentrate on the hot spots (sorry) ofthe Burgundy capital! To be visited on foot and in any order this morning: the Palace of the Dukes of Burgundy for its cult status, the Musée des Beaux-Arts for its medieval nuggets, the Antiquaires district for a coffee and the Owl Trail to turn heads.

Little by little, Loiseau des Ducs has built its nest in Dijon. And what a nest it is! The Hôtel de Talmay, dating from the 15th century and listed as a Historic Monument. Inside, there are 3 ambiances to compete for your favours: intimate with the 16th-century vaulted room, hushed in the very 19th-century bourgeois lounge or a touch of the local with its typical Burgundian style. In the kitchen, this Michelin-starred chef sublimates the great local classics, paying particular attention to sauces, Bernard Loiseau’s gastronomic signature.

Head to the Cité internationale de la Gastronomie et du vin to brush up on your illustrated Burgundy thanks to the Chapelle des Climats. Welcome to the temple of education, where you’ll learn everything you need to know about the wine and vine professions, the different landscapes that make up the region and their respective climats. All in an interactive, modern and colourful setting.

At the end of the afternoon, take a step up to the 46-metre Tour Philippe Le Bon. 316 steps later, you’ll be on the roof of Dijon, ready to enjoy a superb 360° sunset. Gourmet aperitif option in summer!
